Twenty-seven-year-old Evangelos "Spike" Mendelsohn comes from Clearwater Beach, Florida. He trained in classic French cuisine and worked with chefs like Gerard Boyer of Les Crayeres, Thomas Keller of Bouchon and The Maccioni Family of Le Cirque. Spike believes that learning and starting from the basics is an essential step in one's journey towards becoming his best. Just recently, he and his family invested in opening a new chain of Good Stuff Eatery. The restaurant serves his favorites-hamburgers, hotdogs, fries and milkshakes. Spike works as Chef de Cuisine at Mai House, a restaurant listed by New York Times as one of the top ten best restaurants. He lives in Williamsburg, New York.
Spike is a contestant for Top Chef Season 4.
