Originally from Biarritz, France, Mattin Noblia now resides in San Francisco and owns Iluna Basque. He has a C.A.P. de cuisine in southern France, the Basque Region and counts grilled sardines with fresh tomato sauce as his favorite summer recipe. Growing up, he fell in love with cooking when he saw his mother prepare Basque chili called “piment d’ espelette.” If he were to choose his last meal and companion, he said he’d cook a candle-lit dinner for two for himself and Jessica Alba.
