Born and raised in a sheep farm, 29-year-old
Mark learned a great deal in cooking by self-studying. This man from Invercargill, New Zealand left school at age 16 to work at a slaughterhouse. Shortly after, he left New Zealand and went on to travel around the world. He was employed in Melbourne and in Tokyo before finally landing a job in New York. For the past eight years, he's been working with Public Restaurant. He started out as a dishwasher and patiently worked his way up the ladder until he reached his dream position. He is now a sous chef for the famous restaurant.
