'The Biggest Loser' Runner-Up Shares Some Diet Tips and Keeping the Pounds Away

After narrowly losing the fifth season of NBC's The Biggest Loser to winner Ali Vincent, Roger Schultz still lost 164 pounds – “I lost more than my wife!”  That, clearly, is not something you see everyday.  In fact, he walked away with a brand new Biggest Loser house record.

Today, the Enterprise, Alabama-native spends his time giving motivational talks at wellness fairs, or in front of corporations and hospitals, all the while working on his doctorate in education from the University of Alabama on Birmingham.

As the record holder on The Biggest Loser, then, perhaps no one can a better source for some quick diet tips for those trying to shed pounds, not just quickly, but for the long haul.

“Hold the cream sauce, substitute some steamed broccoli for the fries,” he pointed out the basics.  “I have become more cognizant of green vegetables.  The most valuable thing I took away from it was calories.  Don't estimate anything, and if you have to, overestimate them!”

Shultz continues to religiously work out.  On the gym, he takes on an elliptical machine and at home, he rides the spin bike.  He closely monitors his daily caloric intake with a gadget that uses bio-feedback to tell how many calories have been consumed and burned each day.

Tipping the scales at 363 pounds at 40 years old, plus battling type II diabetes, it seemed as though The Biggest Loser was more of a necessity for Shultz than an option.  Luckily, he has managed to maintain his weight.  “If I get over 200 pounds I start to freak out,” he said, rather smugly.  This is staggering, considering that initially he just wanted to get under 300 pounds.

Shultz previously worked as the associate athletic director at Jacksonville State University, a job which, according to him, never ran out of free food.  “I knew if I was taken out of that environment I would succeed.”
